Bacon Blanket Meatloaf

I put a little bacon blanket of left over pieces of bacon I needed to use up. It created a great bacon flavored base for the gravy and wasn’t as greasy as I feared it may be. I enjoyed it with crab tomato bisque and smashed potatoes!

I got to break in my new meat smasher too… Love the color. I loaded the meat loaf up with our fresh garden herbs and spices!
