Calzone Crust

(See notes if using dough delicious blend)
2 C tapioca starch
⅔ C coconut flour
1 ts baking soda
1 ts cream of tartar
¾ ts salt
¾ C cold liquid (milk, nut milk, water)
1 TB apple cider vinegar
2 large eggs
1 TB apple cider vinegar
1/2C shortening (lard, tallow)
1/2C olive oil

Egg wash: 1 egg whisked with 1-2TB of liquid

Notes- If using Dough Delicious blend use 2 leveled cups and add the wet ingredients.

For filling:
Your fav pizza topping and cheese(s)!! I used pepperoni, mozzarella and havarti cheese, pepperoni, salami, jalapenos and mushrooms.


1. Using a large plastic lined tortilla press, or between 2 sheets of plastic and a rolling pin, smash the dough to about 1/4-1/8th of an inch 7-8″ circle.
2. While the dough is still on the plastic, fill half of pressed dough with about 1/3 C total meat/cheese filling and fold over making the shape of a calzone. Press edges together using the plastic being careful not to handle the dough with your bare hands.
3. Refrigerate for 15 minutes, set oven to 400 degrees, baste with egg wash and bake for 20-23 minutes or until golden brown and crusty!
