Earthday Cake

1 and 1/3 C almond meal, ground fine
1/3 C coconut flour
1/2 C sugar, ground fine
2 TB tapioca flour
ts baking soda
1/2 ts salt
4 eggs
1 C liquid (milk, coconut milk, yogurt, ect)
1 stick (1/2 C) of butter, room temperature
1 tb vanilla (or mix with orange, lemon or almond) extract

Dissolve sugar in your liquid in a medium sized bowl then add all wet ingredients. Mix in all other ingredients well and allow to sit while you warm the over to 350 degrees. You can bake in any kind of pan you wish and bake for 20-35 minutes depending on the size of the pan.

For the 2 layered/flavored version in the image I poured 1/2 the batter in an parchment lined 9in pan then whipped 2TB of cocoa powder and 1ts molasses in to the other 1/2 to make the chocolate bottom with the 1/2 remaining in the bowl. Usually we use a 9in spring pan. The middle has crushed fresh strawberries with a few tablespoons of preserves.Next time I might whip cream cheese into the fruity middle…
